Hope you had a splendid weekend? Notice today is the beginning of a new month? Yes! Here is an idea of what you should prepare to open the second half of the year! Melon soup or Egusi soup as it is usually called is a Nigerian delicacy.
Egusi is a kind of soup thickened with the ground Egusi seeds. Besides the seeds, water and oil, Egusi soup topically contains leaf vegetables, other vegetables, seasoning and meat. In a nutshell, it is one of the easiest soup to prepare.
INGREDIENTS
*Fresh or frozen meat ( meat, fish, steak, escargot/ snail, shrimp, smoked fish e.t.c)
* Diced onions
*diced tomatoes
* a pack of frozen spinach of collard greens
*salt
*cayenne pepper
* knorr beef bouillon seasoning
* ground Egusi
* stock fish
METHOD
Start by boiling your fresh meat and stock fish in a different pot. Add seasoning to it. Don't let it to be too soft before bringing down.
Use a pot to heat the palm oil, Add the sliced tomatoes, fresh pepper and onion and allow to fry for few minutes. Add the ground Egusi and turn till the melon is mixed with the sauce.
Pour in the cooked meat and stock fish to the pot of Egusi, add grounded crayfish, and allow to boil for ten minutes.
Add sliced pumpkin leaves (ugu) or water leaves and allow to simmer for five minutes before bringing down. Make sure the salt you add salt to taste.
Note that most chef have a different method but this method is very easy and your stomach will surely be satisfied with the end result.
Serve soup with any swallow of your choice. I will go for EBA or fufu or semovita.
