Today is another opening of vickysecret on how to prepare the Banga soup. The Nigerian Banga soup or Ofe Akwu is native to the niger Delta and the South Eastern parts of Nigeria. In the Niger Delta area where I hail from, Banga soup is commonly eaten with various fufu recipes: Starch, Pounded yam, Semolina, Garri, cassava fufu.

The Banga soup is made from the sauce of squeezed palm fruit (Elaeis Guineenis) and is incredibly rich in high nutritional values.

This African meal is known for its high source of vitamins including Vitamin A for good sight also known as petinole and carotene. Vitamin B1, B2, B3, B5, B6, B12 Which performs different functions in the body including building of the immune system and proper functioning of the body system and of course the palm fruit supplies vitamin E which is known to make one look younger.

The health benefits of this soup can not be over emphasized and here is how to prepare it.

INGREDIENTS
1.Cow foot
2. Cow tail
3. Ox kidney
4. Bush meat
5. Polo (Cow skin)
6. Goat trip (Towel)
7. Chicken gizzard
8. Stockfish
9. ground melon (Egusi)
10. Palm fruit (Banga)
11. Onion(2 bulbs)
12. Pepper(to taste)
13 Maggi crayfish n knnor beef.
14. Salt (to taste)

METHOD
Step 1: Place the washed meat in a large pot, add a drop of water, stock and season with salt and ground pepper and boil for 30minutes or till tender.

Step 2: Add smoked fish and stockfish, cook for another 10minutes and remove.

Note: Prepare the oil-palm nut to extract the oil by boiling the washed nuts for 20minutes until soft. Remove from water and pound to remove the oil. Pass the pounded palm nut mixed with warm water through a sieve to separate the chaff from the sauce.

Step 3: Pour the strained pulp(sauce) into the meat together with the sliced pepper/tomatoe puree and ground melon.

Step 4. Sprinkle in the crayfish and cook for 15minutes until the soup is fairly reduced and thickened to coat the back of the cooking spoon.

Step 5: Check seasoning and serve with pounded yam (Iyan) Or Esin/ Egun Oboho (Starch and plantain pudding) or Eba.

NOTE: Fresh fish crayfish and shrimps can be used instead of meat with a little amount of sliced Okra added instead of ground melon. Freshly washed bitter leave could be added or dried Editan leave.
