Last time I gave out the recipe for Afang Soup also known as Okazi soup. Today recipe is on Edikang Ikong soup also called Vegetable soup.
Edikang Ikong soup is a delicious and rich African soup which has its origin from the Ibibio people of southern Nigeria. It is a top delicacy during very important occasions. Its one of my favorite soup especially when served with pounded yam or Fufu.
INGREDIENTS
1. Assorted meats ( beef, oxtail, tripe, kpomo or cow skin, bush meat)
2. Snails ( wash properly with lemon and limes)
3. Stockfish (450g)
4. Periwinkles (toped and tailed)
5. Dry prawns (cleaned)
6. Ground crayfish (250g)
7. Medium sized onions
8. Fresh Ugu/ pumpkin leaves( washed and shredded) 1.35kg
9. Water leaf 1kg ( prepare and washed)
10. Palm oil (200ml)
11. Maggi crayfish/ knorr beef cube
12. Salt to taste
METHOD
1. Wash the meat thoroughly and place in a large pot, add a little quantity of water, sliced onions, grounded pepper (chillies) and some stock (knorr cube to taste). Allow the meat to get soft and bring down.
2. To Wash the snails, remove from the shells and wash off the slime with lemon or lime. Wash the periwinkles with warm water after cut the tail of the shells.
3. Cook the snail, cooked meat, dry fish and stock fish together with pepper,onion and maggi spice for 30 minutes. Use as little quantity of water as possible.
4. Add the water leaf to the pot of assorted meat and fish and allow the water leaf to boil out water, then add the vegetable leaves and allow to boil.
Lastly, you add red oil, allow to cook for 5 minutes and bring down.
5. Food is ready! Serve with any swallow of your choice. E.g semovita, Pounded yam, fufu, EBA, etc with a cool drink.
Pls Note: that the only water you need is to boil the meat. You don't need too much water since the water leaf will be the source of water for the soup enjoy your day.
